Orange and almond cake

Here is a recipe for an orange and almond cake made with whole oranges and a lot of ground almonds, by Claudia Roden, a kind and beautiful writer who has a lot of safe, reliable and nourishing recipes πŸ•Š I made an orange and almond cake just a couple of days ago as we had quite a lot of fresh oranges at home and the cake was so nourishing and generous, and was a beautiful bright orange colour ! 🌸 oranges are noted to be full of vitamin C, which helps to look after and support your health and wellbeing, and ground almonds are also noted to contain a lot of vitamin E, which helps to nourish your skin, nails, hair and health and wellbeing from the inside out.

Claudia Roden’s orange and almond cake

This is a moist cake that can be served as a dessert with cream.

Serves 12

  • oranges 2 large
  • eggs 6
  • caster sugar 250 g
  • baking powder 1 teaspoon
  • ground almonds 250 g

Wash and boil the oranges whole for 1 1/2 hours or until they are very soft.

When cool enough to handle, cut them open, remove the pips, and puree the oranges, including the peels, in a food processor.

In a large bowl, beat the eggs with the sugar. Add the baking powder and almonds and mix well. Then mix thoroughly with the orange puree and pour into a buttered and floured cake tin – preferably non stick and with a removable base.

Bake at 190 degrees C for an hour. Let it cool before turning out.
