Here is a lovely and plant based recipe for a sweet smoothie bowl by beautiful Ella Mills, the founder and creative director of Deliciously Ella. The recipe is from Ella’s book Deliciously Ella Every Day and I love all of the healthy and natural recipes, kind and helpful tips and beautiful photos in the book so much 🕊🌸 the recipe has a lot of natural and caring ingredients, including strawberries, banana, chia seeds and almond butter and could be so lovely to make in the morning for breakfast, or in the daytime if you would like to. Strawberries are one of my favourite fruits and the recipe could be helpful to make in the spring and summer in case it is easier to find fresh strawberries. You could also hopefully find all of the ingredients in your garden or at your local shop 🌸
Sweet smoothie bowl
This thick, creamy bowl is an awesome breakfast if you have a busy day ahead as it will give you so much energy. It’s more filling than a smoothie and much thicker. It really feels like eating a big bowl of creamy yogurt, so it’s perfect for those of you who are trying to stay away from dairy but are missing your morning yogurt. I love topping my smoothie bowl with lots of berries, home-made granola and an extra dollop of almond butter for a delicious start to the day.
- 6 strawberries
- 1 banana
- 1/2 an avocado
- 5 tablespoons of coconut milk, or other plant based milk
- 1 tablespoon of chia seeds
- 1 heaped tablespoon of almond butter, plus more to serve (optional)
- 1 teaspoon of maple syrup or honey (optional)
- strawberries and mixed seeds, to serve (optional)
Cut the tops and any white core from the strawberries and place in a blender with the banana.
Scoop the avocado flesh out of the skin and add it to the blender with all the remaining ingredients, sweetening it with the maple syrup or honey if you want.
Blend until smooth. Serve with fruit and seeds sprinkled on top, if you like, or a drizzle of almond butter, or both.
If you’re not planning on eating this within about 30 minutes of making it then leave out the chia seeds, as otherwise it will set into more of a jelly than a yogurt texture!
Strawberries: as noted by BBC Good Food, strawberries are a very good source of vitamins C and K and are also full of fibre.
Almonds: as noted by BBC Good Food, almonds are full of healthy fat (monounsaturated fat), fibre, protein, and important nutrients including vitamin E.
Honey: as noted by organicfacts.net, honey is a healthy sweetener, which is rich in vitamins and minerals (including vitamin C and calcium), has antiseptic and antioxidant properties and is also noted to be helpful for skincare.
